Get well soon with Chicken Tortilla Soup Recipe

It’s January, flu and allergy season is here in full force, don’t fret today we have a fabulous tasty recipe to get you back on your feet in no time  at all, did I say it was tasty :)

Chicken Tortilla Soup

Chicken Tortilla soup is one of my favorite cure-all recipes so I thought it was fitting to do a post of my version of this comfort meal considering it's flu season. My secret is blending the onion, garlic, and tomatoes in the beginning and then adding them back into the soup to give a creamy consistency without adding cream.

Ingredients

2 Tbsp. olive oil

½ large (or 1 small) onion, chopped

4 garlic cloves, chopped

1 can diced tomatoes with Chile (excess water drained)

6 cups chicken stock

1 whole cooked rotisserie chicken, shredded (with skin removed)

3 green onions, chopped

½ cup cilantro, chopped

2 cups tortilla chips, crushed

Shredded Mexican cheese for garnish

Sour cream for garnish

Sauté onion in heavy sauce pot over medium heat until soft and translucent, about 5 minutes. Add garlic and cook for another minute. Add drained diced tomatoes and cook for another 3 minutes. Scoop mixture into blender and blend till combined.

Add mixture back into pot and add chicken stock and shredded cooked chicken. Bring to a boil and reduce to simmer for about 15 minutes.

Turn off heat and add chopped green onions, cilantro and 1 and ½ cups of crushed tortilla chips. Serve in bowls and top with remaining crushed tortilla chips, cheese, and sour cream if desired.

I had never had enchilada sauce until this recipe. But it is great. I also use a rotisserie chicken, with store purchased seasoned tortilla strips in the produce section. Then mix avacodo and sour cream together for a topping.
