I’m Amy from Amy’s Cooking Adventures.
I am a stay at home mommy with two precious little boys. I’m on a mission to serve up healthy,
homemade meals to my boys and expose them to a variety of different foods and
flavors.
Today I’m sharing with you the ultimate
sick day comfort food (because you know at some point this winter someone in
your house is going to get a nasty cold).
This Chicken & Rice dish has all of the comfort and flavor of
homemade chicken noodle soup, but it is made up in a fraction of the time
(under 30 minutes!) So the next time you feel the sniffles coming
on, just whip up a bowl and Chicken & Rice and you’re sure to start feeling
better soon!

Recipe Notes:
*I used homemade chicken broth, however store bought broths
as well as vegetable or turkey broth would work just as well.
*You can use any cooked chicken for this recipe! Leftover roast chicken, a grocery store
rotisserie chicken, or boil up some frozen chicken breasts – they sky’s the
limit!
*Want your Chicken & Rice more soup-like? Omit the cornstarch mixture and add an extra
2 cups of chicken broth.
Chicken & Rice
4 cups chicken broth
½ cup Arborio rice,
uncooked
1 large carrot, cut in
coins
½ - 1 tsp salt (to taste)
½ tsp black pepper
¼ cup water
2 tbsp corn starch
1 cup cooked chicken,
shredded
Combine the chicken broth
and rice in a medium saucepan over medium-high heat. Heat until boiling, then reduce heat and
simmer for 10 minutes.
Add the carrots, salt and
pepper. Continue cooking for 7-10
minutes or until the carrots are tender.
In a separate bowl, whisk
together the water and cornstarch.
Slowly whisk the mixture into the soup.
Stir in the chicken. Cook until
the chicken is heated through and the sauce has thickened, about 5 minutes.
Serve hot, accompanied by fresh
rolls.
Serves 3-4
